Noodles with Spring onion and Sauteed Mushroom π
I started experimenting with my dishes and omitting the animal protein entirely. The dish in frame is a take on Gordon Ramsay's Egg fried Rice noodles with Chicken (Link- https://www.youtube.com/watch?v=X1mE2IWeamI). I did not have brocolli so added some home grown fresh spring onions and replaced the proteins with button mushroom.Trust me it tasted awesome and much better. Below is the recipe for my take.
Ingredients : Two cakes of veg noodles.
2 garlic cloves chopped finely
1/2 cup of chopped spring onion
2 button mushrooms chopped
1 tbspoon vinegar
1/2 tbspoon soy sauce
1 teaspoon chilli flakes
1 teaspoon freshly and coarsely crushed black peppercorns
Salt as per taste
Coriander leaves to garnish
Recipe: Heat olive oil in a wok and saute the mushrooms with a pinch of salt. Once done, keep the mushrooms aside and add garlic. When the garlic starts releasing its flavour and slightly brown add your boiled noodles and toss them in medium flame. When the noodles become a little sticky to the wok, add vinegar and soy sauce and toss them until the noodles is well mixed and fried. Add your spring onions and let them get softened. Now add chilli flakes, crushed black peppercorns abd salt. Add water if needed. Once everything is well cooked, plate it and top it with sauteed mushrooms. Add a coriander leave for garnishing.

I have been craving an asian noodle dish lately, this looks delicious and I love mushrooms. I will definitely give it a try. The added benefits you shared of eating vegan are really inspiring, too. Thank you.
