Bengalis and Fish are synonymous in India. We are so proud of our extensive cuisine involving different fishes. Not only cooking the fish but each has its own prep recipes. But we also have a vast range of vegetarian dishes, mostly vegan. Once I am into veganism, I started looking and found there are so many vegan dishes but we mostly try to avoid them because of the intricate prep methods. So I picked up a few recipes and made my ow3-course rainy day meal. This is good for both lunch and dinner. I have updated the recipes below. Moong Dal Khichdi (One pot rice and mung dal porridge) Khichdi is a staple food in a Bengali household. If the weather is rainy, the menu must be khichdi with lots of veggie fritters, papad and a fish/ egg fry as per choice. Also, khichdi is served as ''Prasada" in most Hindu temples and ceremonies. Moong dal khichdi is the most popular recipe amongst Bengali. So not to delay anymore, let's hop into the preparation. Ingredients: Rice ( any r...

The first thing that comes in our mind while switching to Veganism is grocery. In India, all the vegan sources are very expensive and not much options are available. So from day 1, I started looking for recipes to diy my supplies. The first thing I searched for milk. Primarily I got the option of soy milk but I don't have any soybeans as of now. So I searched for other milk options and got so many options! And all are super easy to make. As I have two big packs of rolled oats just sitting in my pantry, I thought to give a shot for Oat milk. And trust me its worth a shot. You might get a gluten flavour but you can use any sweetner to mellow that. Below is the recipe for Oat milk: Ingredients : 200 gms of rolled oats 800 of gms water 2 pitted dates Recipe : Put all the ingredients in a blender and blend it for 30 secs. Once done, strain it through a cheesecloth and squeeze it. Don't squeeze too much otherwise it will be slimy. Store it in a bottle and use it for 2 -3 days. Produc...

Switching to Vegan was not an easy task for me. Being  diagnosed with thyroid issues since the age of 17, I had to follow certain restrictions in my diet. I can never eat uncooked salt, I try to avoid seafood and peanuts as much as possible. But being an ardent foodie and hailing from a Bengali household, I started inclining toward processed foods for my sudden hunger pangs. Also, post thyroid, I always have a salty taste in my mouth for which I always crave sweets. After trying a lot of different diets for the last 7 years I started researching vegan. Once I went deeper into this, I hit a gold mine of clean and lean foods. So 2 weeks into veganism and I am already seeing changes within myself. I am no more fatigued, depressed or bloated, not getting mid night hunger pangs. I started experimenting with my dishes and omitting  the animal protein entirely. The dish in frame is a take on Gordon Ramsay's Egg fried Rice noodles with Chicken (Link- https://www.youtube.co...
